Select a Wallpaper from the easy to use browser to see the wallpaper fullscreen. If you want to use that image for a wallpaper, simply "Save" the image. On the iPhone it will save to the "Camera Roll". On the iTouch it will save to "Saved Images". Simply go to the Settings and select the wallpaper from within the settings menu.
