If there were a theme to the 2014-15 culinary calendar, it would be the rise of the small bar as food leader. No-one could have foreseen this when small bar licences were passed into law by the WA Parliament eight years ago. But much of what is interesting and innovative in food isn’t coming from the big name white-glove establishments, it’s flowing forth from the unfettered creativity of our small bar chefs. While not a new phenomenon in other parts of Australia, Perth stands alone in its food leadership in bars.
